Maltese cuisine is the result of a long relationship between the Islanders and the many foreigners who made Malta their home over the centuries. Couscous is a tiny mediterranean pasta that has a wonderful texture. The only thing I could really liken it to would be if you took a grain of rice and cut it into pin-head-sized pieces. It is a great addition in any stuffed tomato recipe, instead of rice. We just tried this for the first time tonight and loved it!
