Joulupöytä (translated "Christmas table") is the name of the traditional food board served at Christmas in Finland, similar to the Swedish smörgåsbord. It contains many different dishes, most of them typical for the season. The main dish is usually a large Christmas ham, which is eaten with mustard or bread along with the other dishes. Fish is also served (often lutefisk and gravlax), and with the ham there are also so-called laatikot, casseroles with liver and raisins or potatoes or rice and carrots. Two recipes for your Cafe / Bistro business - In a casserole, drop in 20 gm butter. Increase heat slightly; drop in crushed garlic and shallots, Wakame, sieved capers - stir, and lower flame to medium

Chicken Tamale PieSaute onion and green pepper in butter or margarine. Stir in chicken, olives, tomatoes, chile powder and salt. Cook 10 minutes. Pour into 2 qt. casserole. Top with corn chips dot with butter or margarine. Bake at 350 degrees for 30 minutes. Serves 6.
