Like many spinach salads, this one features lots of chopped-up hard-boiled egg. But since most of the calories in an egg are in the yolk, we use just two whole eggs, plus the whites from six additional eggs. The result is a rich, eggy, satisfying spinach salad that keeps the calories in check.

This is my all-time favorite salad. It's very simple, with baby spinach, Granny Smith apples, candied pecans, and my Maple-Mustard Vinaigrette, but BOY is it good! The dressing is addictive, with the perfect combination of sweet and sour flavors, and the apples and pecans add a nice crunchy texture to the salad.
